Skinny Margarita

The Skinny Margarita

On the Rocks

What you'll need:

* 2 oz of Clear Premium Tequila (count 1, 2 while you pour, no need for measuring)

* Tiny splash of Orange Liquor

* Juice of 4 Fresh Lime Wedges

Combine all ingredients over a glass of ice and garnish with a lime wedge

Rigatoni With Sausage and Tomato Cream Sauce

This is so yummy!

Enjoy this easy to fix pasta. The kids and your guests will love it!

Rigatoni With Sausage and Tomato Cream Sauce
Ingredients

•1 Tbs olive oil
•3 mild Italian Sausage, chopped
•4 medium garlic cloves, crushed
•1 medium onion, chopped fine
•1 tsp fennel seed, crushed
•1 tsp sugar
•1 29 oz can tomato sauce
•1 Tbs tomato paste
•5 basil leaves coarsely chopped
•1 pound rigatoni
•3/4 cup half and half
•salt
•fresh ground black pepper
•fresh grated parmesan cheese

1.Heat olive oil in heavy saucepan

2.Add sausage and brown

3.Add onion and garlic, cook until the onion is translucent

4.Add tomato sauce, tomato paste, sugar, fennel, and basil

5.Stir and cook over moderate heat for 20 to 30 minutes

6.Bring 4 quarts of water to a boil in a large pot, and add all the pasta at once and stir well

7.When the sauce is ready, put half and half in a bowl and add a little of the hot sauce to it to temper the milk

8.When the rigatoni is al dente, drain and put in large serving bowl

9.Add the sauce and stir to coat

10.Garnish with basil leaves and serve with fresh parmesan cheese.

Keep fennel seed in a pepper grinder. When you need crushed fennel just use the grinder.

Sloppy Joe's

2 1/2 pounds hamburger
3 cups celery (I don't use)
1 large onion chopped
1 cup ketchup
1 can tomato soup
1 can chicken gumbo soup
2 tbsp dry mustard
1 tsp chili powder
2 tbsp vinegar (I don't use)
2 tbsp brown sugar
2 tsp salt
1/4 tsp pepper

Brown hamburger. Put in a roaster with all other ingredients and bake at 250 degrees for 2 to 3 hours, stirring occassionally. If you use celery, it will remain crunchy.

Simplicity Chocolate Cake

This is a fool-proof 'single bowl' recipe. 

Ingredients

  • 3 tablespoons butter
  • 2 tablespoons cocoa
  • 1 cup self raising flour (or substitute 1 cup of plain flour and 1 tsp of baking powder)
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/2 teaspoon vanilla or almond essence

Method

  1. Melt the butter.
  2. Put all the other ingredients into a large bowl and pour melted butter on top
  3. Beat on high for 3 minutes
  4. Pour all the mixture into a greased cake tin and bake in a moderate oven.
  5. Cook until a toothpick comes out clean (this will depend on your oven and the size of the tin). be careful not to over cook as it is best a little moist. 

Frosting

Mix cocoa and confectioners sugar with some softened butter. Add hot water very slowly and mix to the desired consistency. Let the cake cool a little before putting on the icing
