Grill-A-Packer Sausage Bake
Ingredients:
1 pkg. (8oz) refrigerated crescent rolls
12 oz. bulk pork sausage, browned and drained
1 cup shredded Cheddar cheese (about 4 oz.)
1 cup shredded Monterey Jack cheese (about 4 oz.)
4 eggs, slightly beaten
3/4 cup milk
1/4 teaspoon salt
1/4 teaspoon dried basil leaves
1/8 teaspoon pepper
Preheat grill for 10 minutes. Grease 9-inch square grill-safe baking dish. Unroll crescent roll dough. Press evenly in bottom and 1 1/2 inches up sides of prepared dish, cutting to fit as needed. Spread sausage over crust. Sprinkle with cheeses. In small mixing bowl, blend remaining ingredients. Pour onto cheese. Bake using indirect medium heat with hood closed until set, 25 to 35 minutes, rotating dish once. *if baking try 350 or 375

Potato Soup
6 slices of bacon
6 med. potatoes, peeled and cubed (about 6 cups)
2 cups chopped onions
2/3 cup chopped celery
2 lg. carrots, chopped
1-2 cloves garlic, chopped (optional)
1 cup water
1 1/2 tsp salt
1 tsp sugar
1/4 tsp pepper
1/4 cup flour
1/2 pint of whipping cream
snipped chives
4 cups milk
Directions:
In a large pan fry bacon until crisp. Remove bacon, drain, crumble and set aside. Stir potatoes, onions, celery, carrots, garlic, water, salt, sugar, salt, pepper into bacon drippings. Cook covered until veggies are tender (20-25 minutes). Combine flour and 2 cups milk until thoroughly blended in a pot. Add potato mixture along with remaining milk. Cover over medium heat, stirring occationally until mixture is thickened (10-15 min). Stir in cream and crumbled bacon, heat through. Garnish with chives.
Makes about 10 cups.
Notes
You can add velveeta cheese to this to make it cheezier. Add right before adding bacon.

D'Amico & Sons Turkey with Dried Cherries Pasta Salad
Salad:
1 pound rotini
1 1/2-2 cups cooked, diced turkey breast
1 c dried cherries
1 medium yellow onion, diced
4 diced celery stalks
1 c whole toasted almonds
Poppy-seed dressing:
1/4 c powdered sugar
2 tbls. champagne vinegar
2 c real mayonnaise
2 tbls. poppy seeds
2 tbls. cold water
2 tsp. kosher salt
1/2 tsp pepper
To make salad:
Cook pasta according to package directions. Drain and rinse in cold water. Chill. Combine with turkey, cherries, onion, celery, and almonds.
To make dressing: Combine powdered sugar and vinegar. Add mayo, water, poppy seeds, salt and pepper. Whisk to combine. Add to pasta and toss to combine.
Servings: 6-8 (I'd say more. It was a pretty big salad with a full pound of pasta.)

NOTES: I've eaten this recipe almost as written and it was excellent! I did make a few changes when I made it yesterday though:
I used a 12.5 ounce can of chicken instead of the turkey
I used 1/2 mayo and 1/2 miracle whip for the dressing. In addition, I didn't have champagne vinegar so I used balsamic vinegar instead. Val made it with a raspberry blush vinegar and it worked well.
I don't think whole almonds would be pleasant to bite into in a salad, so I would recommend slivered. Actually, I used pecans instead of the almonds and it was very good.
I didn't have more than 1/4 c dried cherries so I filled in with craisins. It was great!

Chocolate Chip Cookies
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet or milk chocolate chips
Directions:
Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
Sift together the flour, baking soda and salt; set aside.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
use milk chocolate chips.
sprinkle a tiny pinch of sea salt on mine. mmmmm. if you're in to that sort of a thing.
don't be tempted to make them smaller, they aren't as good (texture is compromised) and trust, you will want them big

Loaded Baked Potato Soup
Serves 6
1 pound bacon, roughly chopped
1 medium yellow onion, diced
1 large carrot, peeled and diced
3/4 cup diced celery
4 large Russet potatoes, peeled and diced
4 medium red potatoes, diced
1/4 cup flour
2 cups chicken or vegetable stock
Coarse salt, freshly ground pepper, to taste
4 cups heavy whipping cream
Optional garnishes: chopped chives, bacon bits, sour cream, shredded cheddar and Monterey Jack cheese
- In a 6- to 8-quart stockpot over medium heat, fry bacon until crisp.
- Remove bacon and drain on paper towels, reserving half for garnish. In bacon fat, cook onions, carrots, and celery until the onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.
- Whisk in flour and stir constantly over low heat until the flour is cooked and the mixture has thickened slightly, about 5 to 7 minutes. Add chicken stock and half of the bacon. Season with salt and pepper.
- Over medium-high heat, bring the soup to a simmer and cook for 25 minutes or until the potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add whipping cream and simmer for 5 minutes.
- Adjust thickness by adding water or stock. Soup should have a creamy consistency.
- Season to taste, and garnish with toppings.

DC Cupcake's Vanilla Cupcakes
INGREDIENTS:
2 1/2 cups flour , sifted
1/2 tsp. baking powder, sifted
1/4 Tsp. salt
8 Tbsp. (4 ounces) unsalted butter
1 3/4 cups sugar
2 large eggs, at room temperature
2 1/4 tsp. pure vanilla extract + seeds from 1 vanilla bean
1 1/4 cups whole milk , at room temperature
Georgetown Cupcake Buttercream Frosting
16 Tbsp. (8 ounces) unsalted butter
4 cups confectioner's sugar, sifted
1 tsp. whole milk
1 tsp. pure vanilla extract
1/8 tsp. salt
To make your cupcake unique for your Valentine add a mix-in!
• ½ cup Chopped French Chocolate (if you want to INDULGE your sweetheart)
• ½ cup Rose Champagne (if want to LOOSEN UP your sweetheart)
• ½ cup Diced Strawberries (if your sweetheart is ROMANTIC)
• ½ cup Cinnamon Heart Candies (if your sweetheart is SPICY)
• ½ cup of Coffee Liqueur (if you and your sweetheart like to STAY UP ALL NIGHT)

• ½ cup of Goldfish (if your sweetheart likes something SALTY and SWEET)

DIRECTIONS:
For the cupcakes:
Preheat the oven to 350°. Line 2 cupcake pans with baking cups or grease pans with butter if not using baking cups.
Sift together the flour, baking powder and salt in a bowl.
Place the unsalted butter in the bowl of a stand mixer or hand-held electric mixer. Add the sugar; beat on medium speed until well incorporated.
Add the eggs one at a time, mixing slowly after each addition.
Combine the vanilla extract, vanilla bean seeds and milk in a large liquid measuring cup.
Reduce the speed to low. Add one-third of the flour mixture to the butter mixture, then gradually add one-third of the milk mixture, beating until well incorporated. Add another one-third of the flour mixture, followed by one-third of the milk mixture. Stop to scrape down the bowl as needed. Add the remaining flour mixture, followed by the remaining milk mixture, and beat just until combined.
Scoop batter into baking cups and bake for 10 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Transfer the pan to a wire rack to cool completely.
For the Frosting:
Place the unsalted butter in the bowl of a stand mixer or hand-held electric mixer. Add the confectioner's sugar; beat on medium speed until well incorporated.
**If adding a special Valentine ingredient:
Add the ingredient of your choice to the batter, mix for 10 seconds, then scoop batter into cupcake pans!

Chicken Noodle Soup
1 cup chopped celery
1 cup chopped onion
2 tablespoons margarine or butter
12 cups water
10 oz. frozen mixed vegetables, thawed (I used chopped carrots)
3 to 4 tablespoons chicken-flavor instant bouillon
1/2 tsp dried basil or marjoram leaves
1/4 teaspoon pepper
1/2 package (8 oz) fine egg noodles, uncooked
In 6-quart Dutch oven or large pot, over medium heat, cook celery and onion in margarine until tender; add remaining ingredients except noodles.
Bring to a boil on medium high heat. Reduce heat to medium and cook covered 15 minutes. Add noodles. Cover and cook 10 minutes longer or until noodles are tender.
Makes about 4 1/2 quarts.

Italian Sausage Heros

Italian Sausage Heros
ingredients
8 ounces bulk Italian sausage
4 ounces lean ground beef
1/2 cup chopped onion (1 medium)
1 clove garlic, minced
1 cup ketchup
1 4-ounce can mushroom stems and pieces, drained
1/4 cup sliced pitted ripe olives (optional)
1/2 teaspoon dried Italian seasoning, crushed
3/4 cup shredded mozzarella cheese (3 ounces)
4 French-style rolls or hoagie buns, split lengthwise
directions
1. In a large skillet, cook meat, onion, and garlic over medium heat until meat is brown and onion is tender. Drain off fat.
2. Meanwhile, in a 1 1/2-quart slow cooker, combine ketchup, mushrooms, olives (if desired), and Italian seasoning. Stir in meat mixture.
3. Cover and cook on low-heat setting* for 4 to 5 hours.
4. To serve, place half of the cheese evenly on roll bottoms. Spoon meat mixture over cheese. Top with remaining cheese and roll tops.

Spaghetti with Sauce Italiano
- 1 pound bulk Italian sausage or ground beef
- 1cup chopped onion (1 large)
- 2 cloves garlic, minced
- 2 14.5-ounce cans diced tomatoes, undrained
- 2 4-ounce cans (drained weight) mushroom stems and pieces, drained (optional)
- 6-ounce can tomato paste
- 1 bay leaf
- 1 to 2 tablespoons snipped fresh oregano or 2 teaspoons dried Italian seasoning, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup chopped green sweet pepper (1 large)
- 12 to 16 ounces dried spaghetti
- Grated or finely shredded Parmesan cheese (optional)
1. In a large skillet, cook meat, onion, and garlic over medium heat until meat is brown and onion is tender. Drain off fat.
2. Meanwhile, in a 3 1/2- or 4-quart slow cooker, combine undrained tomatoes, mushrooms (if desired), tomato paste, bay leaf, oregano, salt, and black pepper. Stir in meat mixture.
3. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Discard bay leaf. Turn off cooker. Add sweet pepper; cover and let stand for 5 minutes.

Peanut Butter and Chocolate Cupcake Surprise
Yields 12 Cupcakes
Preparation: Preheat oven to 350 degrees. Place cupcake liners in muffin pan wells.
Dark Chocolate Cupcakes
8 tablespoons unsalted butter, cut into 4 pieces
2 ounces bittersweet chocolate, chopped
½ cup Dutch-processed cocoa powder
¾ cup all-purpose flour
½ teaspoon baking soda
¾ teaspoon baking powder
2 eggs
¾ cup granulated sugar
1 teaspoon vanilla extract
½ teaspoon table salt
½ cup sour cream
Instructions:
1. Place butter, chocolate, and cocoa in a heatproof bowl. Set bowl over saucepan with two inches of simmering water. Gently stir butter and chocolate until melted and combined. Set aside until mixture is warm to touch.
2. Whisk flour, baking soda, and baking powder in small bowl to combine.
3. Whisk eggs in second bowl to combine; add sugar, vanilla, and salt until fully incorporated. Add cooled chocolate mixture and whisk until combined. Sift one-third of flour mixture over chocolate mixture and whisk until combined; whisk in sour cream until combined, then sift remaining flour mixture over and whisk until batter is homogeneous and thick.
4. Fill cupcake line ¼ full. Add a Reeses peanut butter cup to each well and finish pouring cupcake batter on top of it until the wells are two-thirds full. Bake until skewer inserted into center of cupcakes comes out clean, 18 to 20 minutes.
5. Cool cupcakes to room temperature before icing, about 30 minutes.

Chocolate Swiss Meringue
• 5 large egg whites
• 11/2 cup sugar
• 4 sticks unsalted butter, diced and softened
• 1/4 teaspoon salt
• 1 tablespoon vanilla
• 2 tablespoons unsweetened cocoa powder
• 10 ounces bittersweet chocolate, melted and cooled
Instructions:
1. Combine egg whites and sugar in a bowl placed over simmering water. Bring mixture to 150 degrees F while whisking constantly.
2. Transfer mixture to stand mixer bowl, fitted with a whisk attachment and beat on medium speed until mixture cools and doubles in volume.
3. Add butter in one piece at a time, mixing to incorporate after each addition. Add salt and vanilla and mix to combine. Add cooled chocolate and mix to combine.
Chocolate Pouring Sauce
• 2/3 cups dark chocolate
• 2 tablespoons heavy cream
• 4 tablespoons powdered sugar, sifted
• 4-5 tablespoons water, warm
Instructions:
1. Place chocolate and heavy cream in a bowl over simmering water. Let chocolate and cream sit for 2-3 minutes to melt without stirring. Then slowly stir mixture to combine. Add powdered sugar and mix to combine. Add water 1 tablespoon at a time, mixing after each addition until pouring consistency is reached. Set aside and let sauce cool to warm.
Assembly
1. Frost cooled cupcakes. Freeze frosted cupcakes for ten minutes. Drizzle chocolate pour over chocolate frosting (reheat chocolate pour in microwave as needed to keep pouring consistency). Shake sprinkles on chocolate sauce. Place peanut butter cup on top and add a more frosting. Finish with a maraschino cherry.
